These knives boast a beech handle and carbon steel blade, which enables them to hold an edge and makes them easy to sharpen. The flexible, narrow blade glides over bones and makes filleting fish easy. Because these knives have a wood handle and carbon steel blade, they should be hand washed and dried after each use. Over time, the blade will take on a black patina. To prevent rust, we suggest you coat the blade with vegetable oil after each use.
